Cooking tip: Typically, Shirley Temples are made with grenadine, but when you are on a low carb diet, the sugar from grenadine doesn’t fit. So we start this recipe by making our own low carb version that keeps net carbs minimal with surprisingly on point flavor. Use this pomegranate syrup (3.23 grams net carbs per 1/2-fluid ounce) as a replacement for grenadine in other cocktails or drinks for lower carb versions.
Ingredients:
- 1/2 cup 100% pomegranate juice
- 2 tablespoons erythritol-stevia granulated sweetener
- 1 teaspoon fresh lemon juice
- 6 fl ounces vodka (3/4 cup)
- 12 fl ounces zero sugar lemon lime soda (1 1/2 cups)
- 12 fl ounces lime flavored unsweetened sparkling water (1 1/2 cups)
- 6 cups ice
- 6 thin slices lime
- 6 thin slices lemon
- 12 unsweetened canned tart cherries (34g)
Directions:
- In a small sauce pot over medium high heat, stir together pomegranate juice and sweetener. Bring to a simmer, stirring constantly, and allow to vigorously simmer for 5 minutes until reduced and thickened. You should have about 3 fluid ounces of this pomegranate mix. Pour into a clean glass jar and place in an ice bath or the freezer to cool quickly.
- In a pitcher or large glass jar, combine vodka, cooled pomegranate mix, soda and sparkling water. Garnish glasses with lemon and lime wheels, add about 1 cup ice, pour 3/4 cup of the drink mix over the ice, and add 2 tart cherries to a cocktail skewer for the final garnish. One cocktail as described is one serving.
