Cooking tip: Making low carb simple syrup is as simple as using an alternative sweetener! In this case we used sugar free maple flavored syrup, one of our all-time favorite alternative sweeteners. The maple flavor compliments cranberries perfectly for this holiday cocktail. In other recipes, we have used liquid allulose and liquid stevia extract to get the perfect sweetness for a low carb simple syrup that builds into show stopping cocktails or mocktails.
Ingredients:
- 1 1/3 cups frozen cranberries Stahlbush
- 6 tablespoons breakfast syrup, sugar free Smucker's
- 4 fluid ounces bourbon whiskey FNDDS
- 2 fl-oz cranberry juice, unsweetened USDA
- 1 teaspoon fresh orange peel, grated USDA
- 20 fluid ounces Schweppes orange seltzer sparkling water Schweppes
- 2 fluid ounces Real Lemon lemon juice, 100% FNDDS
- 1/4 svg fresh blood orange Melissa's Produce
- 5 tablespoons tap water FNDDS
- 4 each Rosemary, sprigs
- 2 tablespoons xylitol Now
Directions:
- In a medium saucepan, combine frozen cranberries, sugar free maple syrup and water. Bring to a boil over high heat, cooking for about 5 minutes while stirring regularly, until cranberries have burst. Remove from heat, use the back of a wood spoon to smoosh cranberries, stir in orange zest and allow to cool for at least 15 minutes. Strain through a fine mesh strainer, gently pushing the pulp back and forth until you have just over ½ cup thick cranberry syrup.
- To assemble each drink, place 2 tablespoons cranberry syrup in the bottom of a 12-ounce tumbler. Stir in 1 ounce bourbon, 1 tablespoon fresh lemon juice, and 1 tablespoon unsweetened cranberry juice. Add ice and fill with about 5 ounces orange flavored sparkling water.
- Garnish each drink with a thin slice of blood orange (or cara cara orange) and a piece of frosted rosemary if desired. To make frosted rosemary, rinse 4 small sprigs rosemary, shake gently to remove some water, and place on a sheet of parchment paper. Sprinkle evenly with about 2 tablespoons granulated no-sugar sweetener (we found both xylitol and truvia worked well). Flip and ensure even coverage of the granulated sweetener. Allow to set for at least an hour, and up to 1 day, before using. You can use this same method to create frosted cranberries for garnish as well.
