Cooking tip: Packed with protein, the cottage cheese in this recipe provides a cheesecake flavor, while the dry ingredients help create a texture closer to brownie batter. For best results, look for a whey protein powder that includes xanthan gum and has 2 net carbs or fewer per serving.

Ingredients:

  • 1 cup (220g) whole milk cottage cheese
  • 2 tablespoons heavy cream
  • 2 tablespoons sugar free French vanilla syrup
  • 1 scoop (25g) chocolate whey protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon powdered erythritol- monk fruit sugar free sweetener
  • 1 Atkins Brownie Delight High Protein Bar

Directions:

  1. In a high power blender, process the cottage cheese, heavy cream and sugar free syrup until very smooth and cottage cheese is evenly blended, about 2 minutes on high. Add in protein powder, cocoa powder and powdered sweetener and process on low until incorporated. Scrape down the sides and process on high until very well combined and smooth, another minute.
  2. Evenly divide into two serving cups, about 1/2 cup in each. Refrigerate until thickened and cool, at least 2 hours. Before serving, chop Atkins Brownie Delight High Protein Bar and evenly distribute between the two cups. One cup as described is one serving.
