Cooking tip: We tested a variety of recipes using the Ninja CREAMi machine and found including cream cheese really helps create an ice cream texture, while Atkins shakes provide a wonderful rich flavor. Getting the cream cheese to mix smoothly with the syrup was a little tricky, but starting with a small amount of syrup and adding small amounts while whisking allowed everything to blend smoothly.

Ingredients:

  • 2 tablespoons cream cheese
  • 4 tablespoons sugar free caramel syrup, divided
  • 1/4 cup heavy cream
  • 1 Atkins Creamy Vanilla Protein Shake
  • 1 teaspoon unsalted butter
  • 1/2 cup (55g) chopped fresh granny smith apple

Directions:

Equipment note: This recipe uses a Ninja Creami* machine. You will need one empty Creami pint along with the machine for this recipe.
  1. In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk 1 tablespoon sugar free caramel syrup into the warm cream cheese until it reaches a thick icing texture. Slowly whisk in 2 more tablespoons caramel syrup and the heavy cream until evenly combined then stir in Atkins Creamy Vanilla Protein Shake. Pour into the CREAMi pint, cover and freeze for 24 hours.
  2. In a small non-stick skillet melt butter over medium heat. Add chopped apples, remaining tablespoon sugar free caramel syrup and sauté until the apples are softened, about 5 minutes. Set aside to cool for at least 5 minutes, and set aside 2 tablespoons for use as garnish if desired.
  3. Remove frozen pint, process using Ninja Creami on the lite ice cream setting, then follow up with a respin for the best texture. Create a wide hole in the center, add cooked and cooled apples, and process for Mix In. Serve right away, or freeze for up to 30 minutes before scooping. Two small scoops (one third of the pint), evenly garnished with sauteed apples (about 2 teaspoons per serving) are one serving.
