Ingredients:

  • 1 cup vodka FNDDS
  • 2 tablespoons coconut aminos seasoning Coconut Secret
  • 2 teaspoons Tabasco hot sauce FNDDS
  • 1/2 teaspoon lemon pepper seasoning Lawry's
  • 22 eas fresh cherry tomatoes FNDDS
  • 2 eas fresh celery stalk, large, 11" to 12" FNDDS
  • 11 eas pickles, mini FNDDS
  • 8 slices raw bacon, cured USDA

Directions:

Ingredient note: You will need 22 4-inch cocktail skewers for this recipe.
  1. In a medium bowl, whisk together vodka, coconut aminos, hot sauce and lemon pepper. Wash cherry tomatoes, use a toothpick to poke holes in the tomatoes, and place into the bowl with the vodka. Wash and slice celery into ¾-inch chunks, resulting in 22 even pieces. Place with the tomatoes in the vodka mixture and refrigerate for at least 3 hours or overnight.
  2. In the last hour of the tomatoes and celery soaking, cook the bacon until not quite crisp. We suggest baking bacon in a single layer on a rimmed sheet pan in a 400°F oven for 15 to 20 minutes. Allow to cool, then cut each slice of bacon into thirds.
  3. Thread each skewer with a tomato, piece of bacon, a piece of celery, and half of a pickle. Two skewers as described is one serving.
Note: only a small amount of the vodka mixture gets absorbed by the vegetables. As such you can adjust the calories per serving down to 101.6g. Use the leftover vodka mix to make a Bloody Mary by adding 2 tablespoons vodka mixture to 4 ounces tomato juice for 4.8g net carbs.
