Cooking tip: Sweet and creamy ambrosia salad is more a dessert than a salad, and is a true midwestern treat. We reimagined this salad with higher protein and lower sugar ingredients, including using lower carb fruits, for an easy and enjoyable dessert that fits in your low carb lifestyle.

Ingredients:

  • 1 scoop no sugar added vanilla whey protein powder
  • 3 tablespoons light sour cream
  • 4 ounces canned no sugar added pineapple chunks
  • 2 Atkins Coconut Crème Whipped Protein Bars, roughly chopped
  • 1/4 cup fresh pink grapefruit sections (58g)
  • 1/4 cup fresh blueberries (37g)
  • 1/4 small Granny Smith apple (36g), chopped
  • 2 tablespoons unsweetened dried coconut shreds (10g)
  • 1 tablespoon pecan halves (7g), chopped

Directions:

In a medium bowl, stir together sour cream and protein powder until very well combined and smooth. Fold in pineapple, chopped bars, grapefruit, blueberries, apple and half the coconut until evenly dispersed and coated. Garnish with remaining coconut and chopped pecans. One serving is a loose 1/2 cup salad.
