Ingredients:
- 32 oz, raw, without shell, yield after cookings Lobster
- 4 ounces Tillamook Pepper Jack Cheese
- 2 large Scallions or Spring Onions
- 1 clove Garlic
- 2 tablespoons Cilantro, fresh, chopped
- 7 tablespoons Unsalted Butter Stick
Directions:
Use the Atkins recipe to make Atkins Low Carb Wheat Bread; you will need 4 slices. Toast them until dry or use stale bread then process in a food processor to make bread crumbs; use 1/2 cup.
- Heat oven to 400°F. Butter a 1½ quart shallow baking dish or gratin dish. Shred the cheese and set aside.
- Melt 1/3 cup butter in a small skillet, over medium-high heat. Sauté diced green onions 3 minutes, until softened; add minced garlic and cook 1 minute more.
- Place lobster meat in prepared baking dish and drizzle with garlic butter. Toss to coat. Sprinkle with breadcrumbs and then with cheese. Dot with remaining tablespoon of butter.
- Bake 15 minutes, until lobster is hot and cheese is melted. Sprinkle with cilantro.
