Lentils with Toasted Pepitas

Ingredients:

  • 1/4 cup Cooked Lentils
  • 1 1/2 ounces Roasted Unsalted Hulled Pumpkin and/or Squash Seeds

Directions:

  1. Preheat oven to 350°F.
  2. Place raw pepitas (pumpkin seed kernels) on a sheet pan and toast for 5 minutes.
  3. Meanwhile, reheat cooked lentils till warmed through. Season with salt and freshly ground black pepper.
  4. Sprinkle pepitas over lentils and enjoy!
