INGREDIENTS

  • 1 oz LEMON JUICE Jetro Cash & Carry Enterprises, Inc.
  • 2 cup Arugula (Rocket)
  • 3 tbsp REAL MAYONNAISE Unilever Bestfoods North America
  • 6 oz Tuna in Water (Canned)
  • 1 tablespoon OLIVE OIL Salov North America Corp.
  • 0 1/2 cup slices Cucumber (with Peel)

DIRECTIONS

Be sure to zest the full lemon before juicing.

 

  1. Combine the tuna, 1 1/2 Tbsp lemon juice, zest, and mayonnaise in a small bowl.  Season with salt and freshly ground black pepper.
  2. Serve over arugula and slice cucumber seasoned with 1 Tbsp olive oil and 1/2 Tbsp lemon juice.
