Ingredients:
- 1 each Zucchini, Large (323g each)
- 1 ounce Uncured Pork & Beef Pepperoni (4 slices=1 oz)
- 1/2 serving Amy's Kitchen Family Marinara Pasta Sauce, 1/2 cup
- 1/2 teaspoon Italian Seasoning
- 3/4 cup(s) Mozzarella cheese, shredded, whole milk (1 cup= 113 g)
Directions:
- Preheat oven to 350°, prepare a baking sheet with parchment paper.
- Slice zucchini into 24 ¼-inch slices, and place in a single layer on the prepared baking sheet. Top each slice with ½ teaspoon pasta sauce and sprinkle the seasoning over all the zucchini slices.
- Finely dice the pepperoni slices and place in a small bowl. Combine with the shredded cheese until evenly distributed. Top each zucchini slice with ½ tablespoon cheese and pepperoni mixture.
- Bake zucchini bites for 8-10 minutes, until cheese is fully melted and zucchini slices are tender. If you start with 24 zucchini slices, then 6 pizza bites is one serving.
