Keto White Bread Mini Waffles

Ingredients:

  • 1 dash Salt
  • 1 each Egg
  • 1 tablespoon Coconut Flour
  • 2 tablespoons Tap Water
  • 1/2 tablespoon Mayonnaise (Hellman's Real)
  • 1/4 teaspoon Baking powder

Directions:

Equipment note: this recipe calls for the use of a mini waffle maker, such as the Dash mini. You can use an alternative waffle iron, or a small skillet to make two servings, each one using 3 tablespoons batter.
  1. In a small bowl, whisk together all ingredients until well blended. Allow to sit for 3 minutes.
  2. Preheat mini waffle iron. Lightly spray waffle iron with oil. Fill mini waffle iron with 3 tablespoons batter and cook following manufacturer’s instructions, or until steam is no longer escaping, 3-5 minutes. Remove waffle from waffle iron to cool on a rack. Repeat with remaining batter. Two mini waffles are one serving.
  3. This waffle recipe is an excellent base recipe for either sweet or savory bread replacement. Just be sure to track any additions to this recipe.
