Ingredients:
- 1 dash Salt
- 1 each Egg
- 1 tablespoon Coconut Flour
- 2 tablespoons Tap Water
- 1/2 tablespoon Mayonnaise (Hellman's Real)
- 1/4 teaspoon Baking powder
Directions:
Equipment note: this recipe calls for the use of a mini waffle maker, such as the Dash mini. You can use an alternative waffle iron, or a small skillet to make two servings, each one using 3 tablespoons batter.
- In a small bowl, whisk together all ingredients until well blended. Allow to sit for 3 minutes.
- Preheat mini waffle iron. Lightly spray waffle iron with oil. Fill mini waffle iron with 3 tablespoons batter and cook following manufacturer’s instructions, or until steam is no longer escaping, 3-5 minutes. Remove waffle from waffle iron to cool on a rack. Repeat with remaining batter. Two mini waffles are one serving.
