Keto Vanilla Latte Popsicles

Ingredients:

  • 2 milliliters Liquid Monkfruit Extract (3 drops= 0.2 ml)
  • 1/2 teaspoon Espresso, instant powder
  • 8 ounces Atkins Vanilla Latte Shake
  • 1/4 teaspoon Xanthan Gum
  • 1/4 cup Heavy Cream, liquid

Directions:

  1. In a blender, combine Atkins Vanilla Latte Shake with all other ingredients on high speed, stopping to scrape down the sides at least once to ensure all ingredients are well mixed.
  2. Pour into popsicle molds and freeze for at least 3 hours, or until solid. This will make 2 3-ounce popsicles, of which one popsicle is one serving.
