Ingredients:

  • 1 bag Quest BBQ Protein Chips
  • 1/4 cup super finely ground blanched almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon table salt
  • 20 ounces raw salmon
  • 2 tablespoons olive oil, divided
  • 2 tablespoons Truvia erythritol-stevia blend no sugar sweetener, divided
  • 1 tablespoon original cayenne pepper hot sauce
  • 6 tablespoons plain, whole milk Greek yogurt
  • 3 tablespoons mayonnaise
  • 2 tablespoons canned chipotle chile peppers in adobo sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon minced or pressed fresh garlic
  • 1/2 teaspoon coarse kosher salt

Directions:

Ingredient note: you will need about 1 ¾ pounds raw salmon filets for this recipe. Removing the skin will reduce the weight to about 20 ounces.
  1. Warm air fryer to 390°F.
  2. In a food processor, pulse Quest BBQ Protein Chips until no large chunks remain. Add almond flour, garlic powder, paprika, and table salt to the food processor and pulse until very well combined. Place in a large bowl.
  3. Remove skin from salmon fillets and cut into 1-inch square chunks. Place into the large bowl with the chip mix and shake until each piece of salmon is evenly coated in crumbs. Arrange a single layer on an air fryer pan and spray both sides with olive oil (about 1 tablespoon total). Air fry for 3 minutes, flip and fry another 3 minutes until browned and internal temperature is 145°F. Place cooked salmon bites on a serving plate and repeat until all salmon is fully cooked.
  4. While salmon is cooking, in a small microwave safe bowl combine 1 tablespoon no-sugar sweetener and hot sauce. Microwave in 30 second increments, stirring between, until sweetener is dissolved. Evenly drizzle sauce over cooked salmon bites, toss to evenly coat and sprinkle with coarse kosher salt.
  5. To make chipotle dipping sauce, in a food processor combine yogurt, mayonnaise, 1 canned chipotle, fresh lime juice, 1 tablespoon olive oil, remaining 1 tablespoon liquid sweetener, and garlic, scraping down the sides and bottom as needed, until very well combined. Scrape into a small bowl and serve with warm salmon bites. One serving is about 88 grams cooked salmon with 2 tablespoons dip.
