INGREDIENTS

  • 2 lb raw chicken breast, skinless, boneless
  • 2 Tbsp olive oil
  • 1 1/2 Tbsp cajun creole blend seasoning
  • 1 stick butter, unsalted
  • 1 1/2 Tbsp fresh garlic
  • 3 tsp Tabasco hot sauce
  • 1 tsp red chili peppers, crushed flakes
  • 0 1/2 cup parmesan cheese, grated
  • 0 1/2 cup fresh parsley, chopped

DIRECTIONS

Equipment note: You will need at least 11 appetizer size, 4-inch skewers for this recipe. If using wooden skewers, soak them in water for at least 30 minutes, or as directed on the package, before using.


  1. Cut chicken breasts into 1 to 1 ½ -inch cubes and place in a medium bowl. Toss with olive oil and Cajun seasoning until evenly coated. Evenly slide chicken cubes onto 11 skewers, packing tightly, and set aside.
  2. In a medium saucepan over low heat, melt better. Add minced or pressed garlic, hot sauce, red pepper flakes, and salt, whisking until garlic is fragrant, about 2 minutes. Remove from heat.
  3. Set aside two tablespoons parmesan and two tablespoons chopped parsley for garnish and add remaining parmesan and parsley to the garlic butter, whisking until well combined. Measure out ½ cup garlic butter and set aside for use in the last step.
  4. Heat air fryer to 390°F for at least 3 minutes.
  5. Place chicken skewers in a single layer in the air fryer, working in batches if needed, and cook for 5 minutes. Flip and coat top side of each skewer with a rounded ½ teaspoon well mixed garlic butter sauce. Air fry for 3 minutes. Flip and coat each skewer with another rounded ½ teaspoon garlic butter, then cook for another 3 minutes. Flip and coat evenly with any remaining garlic butter sauce, cooking until internal temperature reaches 165°F. Exact amount of time will vary based on the size of the chicken cubes and the air fryer, but start checking temperature after 11-12 minutes of cooking.
  6. Place cooked skewers on a serving plate, and coat evenly with reserved ½ cup garlic butter sauce (from step 3), about 2 teaspoons on each. Sprinkle coated skewers evenly with reserved parsley and parmesan and serve. One skewer as described is one serving.

Chicken breasts are the ideal flavor base for these garlic forward skewers! The key to keeping the chicken moist is to cut the pieces so they aren’t too small or too big, and then to pack them tightly on the skewers. Using an instant read meat thermometer is the best way to make sure your chicken is done just right and does not become chewy or dry. These spicy skewers are great high-protein, keto friendly appetizers, or you can use two or three skewers as the protein base for a meal prep lunch, or the protein highlight for a salad!
