13 oz fresh radishes

0 1/4 tsp table salt

2 oz parmesan cheese, grated

2 Tbsp lemon juice, 100%, fresh squeezed

0 1/2 cup fresh basil

2 Tbsp olive oil

0 1/2 tsp lemon zest
DIRECTIONS
Ingredient Note: we recommend using a variety of types of radishes for this recipe including French radishes, easter egg radishes, and watermelon radishes. We used about two bunches, with greens trimmed, for this recipe.
- Trim greens from radishes and wash thoroughly. Thinly slice half of the radishes using a mandolin slicer, halving or quartering the remaining radishes. Place into a large bowl. Sprinkle with salt and use clean hands to rub/massage the salt into the radishes.
- To the radishes, add grated parmesan cheese and lemon juice and fold together until evenly coating radishes. Add small basil leaves, and roughly chop or tear larger basil leaves then add to the radishes along with olive oil. Fold together until evenly distributed.
- Serve on a platter, garnished with lemon zest. One serving is 1/6 of the salad, about ½ cup.
Cooking Tip
Similar to massaging kale to help it become more tender, massaging salt into these radishes adds flavor as well as helping to tenderize crunchy radishes to make them the perfect base for this fresh salad. Spring radishes bring sweetness to this recipe, and that flavor is enhanced by choosing a variety of radishes for this recipe including French radishes, easter egg radishes, and watermelon radishes.
