Keto Horchata CREAMi Ice Cream
Cooking tip: We tested a variety of recipes using the Ninja CREAMi machine and found including cream cheese really helps create an ice cream texture, while Atkins shakes provide a wonderful rich flavor. Using this ice cream base, you can switch out cinnamon for other spices if desired, just be sure to adjust the net carbs with any swaps for accurate tracking.

Ingredients:

  • 1 tablespoon cream cheese USDA
  • 2 tablespoons truvia, sweet completed granulated sweetener
  • 1 teaspoon cinnamon, ground USDA
  • 1 teaspoon vanilla extract USDA
  • 1 each Atkins Creamy Vanilla Shake
  • 6 tablespoons heavy whipping cream USDA

Directions:

Equipment note: This recipe uses a Ninja Creami* machine. You will need one empty Creami pint along with the machine for this recipe.
  1. In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk the sweetener, vanilla extract, and cinnamon into the warm cream cheese until it reaches a thick icing texture. Slowly whisk in heavy cream until fully incorporated. Whisk in Atkins Creamy Vanilla Shake and pour into the CREAMi pint, cover and freeze for 24 hours.
  2. Remove frozen pint, process using Ninja Creami on the lite ice cream setting, then follow up with a respin for the best texture. Two small scoops (one third of the pint) are one serving.
