Keto Flax Crust Cuban Pizza

Ingredients:

  • 1/4 teaspoon Salt
  • 6 teaspoons Yellow Mustard
  • 1 each Dill or Kosher Pickle Spear
  • 3 ounces Ham, cured and roasted
  • 2 ounces Gruyere Cheese
  • 1/2 cup (8 fluid ounces) Water, tap
  • 1 1/2 cups Flax Seed Meal
  • 3/4 teaspoon Oregano, ground
  • 1/4 teaspoon Red Chili Pepper, crushed
  • 3 ounces Chicken Breast (cooked), no skin, roasted
  • 3/4 teaspoon(s) Basil, dried leaves (1 tsp= 0.7 g)
  • 2 teaspoons Baking powder
  • 2 tablespoons Red Onion, raw chopped
  • 2 tablespoons Parsley, fresh, chopped
  • 3 tablespoons Olive Oil
  • 3 each Egg
  • 1 teaspoon Xylitol

Directions:

  1. Whisk eggs, water and olive oil in a small bowl.  Set aside. 
  2. Combine flax seed meal, baking powder, xylitol, oregano, basil, salt, and crushed red pepper, blending thoroughly.  Add the wet ingredients to the dry ingredients; mixing well; allow to sit for 5 minutes to thicken up.   
  3. Spread onto a pan with greased parchment and use a greased angled spreader/spatula to spread out into a rectangle roughly ¼-inch thick. Bake at 425°F for 15-20 minutes until golden brown.
  4. Spread the mustard over the crust, evenly top with thinly sliced red onion, diced pickle, shredded cooked chicken, ribbon sliced ham, chopped parsley, and shredded cheese. Bake at 425°F for 7 minutes, until cheese is melted. Slice into 8 even pieces. Two pieces is one serving.
