Keto Creamy Scrambled Eggs with Dill and Smoked Salmon

Ingredients:

  • 8 large Eggs (Whole)
  • 4 tablespoons Unsalted Butter Stick
  • 1/2 teaspoon Salt
  • 1 tablespoon Dill (Dried)
  • 6 ounces Smoked Chinook Salmon (Lox)
  • 3 tablespoons Heavy Cream
  • 4 medium (4-1/8" long) Scallions or Spring Onions

Directions:

  1. In a large bowl, beat eggs, cream, dill and salt.
  2. Melt butter in a large skillet over medium heat. Add diced scallions; cook 8 minutes until softened. Pour in egg mixture; cook 3-4 minutes, stirring occasionally, until almost set.
  3. Cut salmon into bite sized pieces and place it evenly over the eggs. Cook 1 minute more or until eggs reach desired doneness.
  4. Transfer to warmed plates.
