Keto Cinnamon Dalgona Coffee
Cooking tip: Pro tip: This recipe works best using the most basic instant coffee on the market.

Ingredients:

  • 2 tablespoons Confectioners (powdered) erythritol
  • 2 tablespoon (2.7 g=1 tbsp) Coffee, instant powder, dry
  • 2 cups Coconut Milk Beverage, plain, unsweetened
  • 1/4 teaspoon Cinnamon, ground
  • 3 tablespoons Hot water

Directions:

  1. In a large bowl, dissolve the powdered erythritol in hot water. Add the instant coffee and cinnamon and combine with a hand mixer on medium high speed until lightened in color and stiff peaks form, up to 5 minutes.
  2. To serve, fill a glass with 1 cup of unsweetened milk alternative, and dollop of ½ cup of the foam. You can sip it as is, or mix the coffee foam into the milk. The foam will keep in the refrigerator for up to 2 days. If it seperates, you can quickly whip it back into stiff peaks.
Note: you can make this using a stand mixer, or even by hand with a balloon whisk (although whipping by hand will take much longer).
