Ingredients:

  • 2 cups shredded fresh cabbage (140g)
  • 3/4 medium fresh, unpeeled cucumber (226g)
  • 1/2 cup chopped fresh scallions, tops & bulb (50g)
  • 1/3 cup diced fresh green bell pepper (50g)
  • 1 fresh avocado (136g)
  • 1 cup fresh basil (24g)
  • 1/4 cup fresh chives (12g)
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove fresh garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions:

  1. Into a medium bowl, combine finely chopped green cabbage, diced cucumber, thinly sliced scallions, and diced green bell pepper, tossing to mix.
  2. In a food processor, combine avocado, basil, chopped chives, olive oil, lemon juice, minced garlic, salt, and pepper. Process until smooth and well mixed, scraping down the sides if needed. Pour over the chopped vegetables.
