Keto Chocolate Pecan Shortbread Drops

Ingredients:

  • 16 tablespoons Unsalted Butter Stick
  • 1/2 cup Sucralose Based Sweetener (Sugar Substitute)
  • 1 large Egg (Whole)
  • 3/4 cup(s) Soy flour, defatted (1 cup= 105g)
  • 1 teaspoon Vanilla Extract
  • 3 teaspoons Baking Powder (Straight Phosphate, Double Acting)
  • 1/2 cup chopped Pecan Nuts
  • 3 tablespoons Cocoa Powder
  • 2 tablespoons Cream, heavy, liquid

Directions:

  1. Preheat oven to 325°F. 
  2. With an electric mixer, beat butter, sucralose and stevia on medium speed until light and fluffy, about 4 minutes. Turn speed to low and add egg, cream, vanilla extract and 1 tsp chocolate extract (optional). Scrape bowl down, and then add soy flour, baking powder, cocoa powder and pecans, mixing until just combined. 
  3. Drop dough by heaping teaspoonfuls onto ungreased baking sheets. Bake 12 to 14 minutes, until cookies are set. Cool on sheets 1 minute before transferring to wire racks to cool completely.
