Ingredients:
- 1 cup unsalted butter, room temperature
- 1/2 cup sucralose based sweetener (sugar substitute)
- 1 packet stevia sugar substitute
- 1 large egg
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 3/4 cup (79g) defatted soy flour
- 1/2 cup chopped pecans
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon double acting baking powder
Directions:
- Preheat oven to 325°F.
- With an electric mixer, beat butter, sucralose and stevia on medium speed until light and fluffy, about 4 minutes. Turn speed to low and add egg, cream, vanilla extract and 1 tsp chocolate extract (optional). Scrape bowl down, and then add soy flour, pecans, cocoa powder, and baking powder, mixing until just combined.
- Drop dough by heaping teaspoonfuls onto ungreased baking sheets. Bake 12 to 14 minutes, until cookies are set. Cool on sheets 1 minute before transferring to wire racks to cool completely.
