Keto Chocolate Covered Bacon
Cooking tip: We found two key techniques for excellent chocolate covered bacon. The first is to bake the thick cut bacon in the oven to allow the strips to stay as flat as possible, while also getting nice and crispy. The second is to get as much oil as possible off the cooked bacon so the strips stay crisp and the chocolate sticks to the bacon. These two techniques result in a taste sensation that spreads the love for both savory bacon and delightfully sweet, low carb Atkins Endulge Crunchalicious Chocolate Bars.

Ingredients:

  • 15 ounces raw bacon, cured USDA
  • 4 bars Atkins Endulge Crunchalicious Bar
  • 1/2 tablespoon coconut, shredded, unsweetened Now
  • 1/2 tablespoon almonds, sliced USDA
  • 1/4 ounce pistachios FNDDS
  • 1/4 teaspoon sea salt, flakes

Directions:

Ingredient note: We suggest using 10 pieces of thick cut bacon, each slice roughly 1 ½ ounces, for this recipe.
  1. Preheat oven 400°F. Prepare a sheet pan with a cooling rack over the top. Line the sheet pan with parchment paper of foil for easy clean up.  
  2. Arrange bacon in a single layer on the cooling rack. Bake until cooked and crispy, about 30 minutes for thick cut bacon. Check bacon starting at 15 minutes to ensure it does not burn. Allow cooked bacon to drain on a paper towel lined plate or baking sheet, using additional paper towels to soak up grease from both sides of the bacon to ensure it stays crisp and that the chocolate will stick.
  3. In a double boiler at least 1-inch over simmering water, melt the Atkins Endulge Crunchalicious Bars, stirring frequently. Spread melted chocolate evenly over bacon, about ½ tablespoon for each of 10 slices of cooked and cooled bacon. Top chocolate covered bacon with sliced almonds, unsweetened coconut shreds, chopped pistachios, and flakey salt as desired. We split each topping between two slices of chocolate covered bacon, and left two slices with just the chocolate. Chill in the refrigerator until chocolate has set, about 5 minutes, then serve. These can be kept in the refrigerator in an airtight container for up to 3 days. One bacon slice as described is one serving.
