Three glass meal prep containers filled with grilled chicken, asparagus, mozzarella, and colorful cherry tomatoes.

Ingredients:

  • 192 grams fresh asparagus
  • 4 cups baby spinach (170g)
  • 16 cherry or grape tomatoes (272g)
  • 8 ounces fresh Mozzarella cheese ball, cubed
  • 8 ounces chopped roasted chicken
  • 1/2 cup fresh basil (12g)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper

Directions:

  1. Wash and remove woody portion of asparagus. Steam asparagus until tender, about 7 minutes.
  2. To assemble bowls, place 1 cup (42 grams) baby spinach in the bottom of each of 4 3-cup containers with tight fitting lids. Slice the tomatoes in half and add 4 cherry or 8 grape tomatoes to each bowl. Cube mozzarella and add 2 ounces to each bowl. Cut asparagus into bite size pieces, and add about 45 grams to each bowl. Cube chicken and add 2 ounces to each bowl. Wash and cut basil into thin strips and add 3 grams (about 2 large leaves) to each bowl.
  3. In a small bowl, whisk together the oil, vinegar, salt and pepper until well combined. Portion 1 ½ tablespoons dressing for each bowl in separate leak-proof containers. 
  4. Store in the refrigerator for up to 5 days. Before serving, shake the dressing to combine and drizzle over the bowl. Serve cold. One bowl and 1 ½ tablespoons dressing is one serving.
