Keto Bloody Mary Deviled Eggs
Cooking tip: There are many ways to hard boil an egg, and many suggestions about how to get hard boiled eggs to peel more easily. One simple option is to place whole large eggs in a small saucepot, cover with cold tap water, and place over high heat on the stove. Allow to come to a boil, reduce heat to low, cover and cook for 10 minutes. Place cooked eggs directly into an ice water bath and once cool, peel and use in this recipe.

Ingredients:

  • 1 1/2 tablespoons mayonnaise, real Best Foods
  • 1/2 teaspoon seasoning mix Old Bay
  • 4 eas hard boiled egg, large USDA
  • 1 1/2 teaspoons cajun creole blend seasoning Spice Hunter
  • 1/4 cup fresh celery USDA
  • 8 eas stuffed green olives, medium FNDDS
  • 1/4 teaspoon yellow mustard seeds, ground USDA
  • 1/2 tablespoon Real Lemon lemon juice, 100% FNDDS
  • 1/2 teaspoon Tabasco hot sauce FNDDS

Directions:

  1. Slice peeled hard boiled eggs in half lengthwise. Pop the yolks into a small bowl. 
  2. On a small plate, scatter the Cajun seasoning. Dip the sliced surface of each of the egg whites in the Cajun seasoning, creating a light coating. Place on a serving plate.
  3. Into the small bowl with the egg yolks, add mayonnaise, lemon juice, hot sauce, Old Bay seasoning, and mustard powder. Mix with a fork until creamy and well combined, then scrape into a piping bag or small plastic bag. Evenly fill each egg with the yolk mix. 
  4. Garnish each deviled egg with a pimento stuffed olive and a small section of celery with leaves from the center of the stalk. One deviled egg as described is one serving.
