Keto Antipasto Skewers

Ingredients:

  • 3 ounces hard beef & pork salami USDA
  • 2 ounces kalamata olives, pitted DiLusso
  • 12 eas fresh basil, leaf FNDDS
  • 3 ounces red bell pepper, roasted Mezzetta
  • 12 tomatoes fresh grape tomatoes
  • 3 ounces sopressata salami DiLusso
  • 12 eas marinated artichoke hearts, quarters, drained 365 Everyday Value
  • 12 eas green olives, medium FNDDS
  • 5 ounces fresh mozzarella cheese, ciliegine Belgioioso

Directions:

Ingredient note: You will need 12, 4-inch cocktail skewers for this recipe.
  1. Wash tomatoes and basil. Cut roasted red pepper into 1X1-inch squares, resulting in 12 squares.
  2. Onto each skewer, string one each of the grape tomato, folded basil leaf, piece of roasted red pepper, mozzarella ball, folded slice of each salami, one of each type of olive, and one artichoke heart quarter. Place skewers on a platter to serve. One skewer as described is one serving.
