INGREDIENTS

  • 1 lb Kale
  • 4 medium slice (yield after cooking) Bacon
  • 1 small Onions
  • 0 1/4 tsp Crushed Red Pepper Flakes
  • 2 tsp Garlic
  • 1 tbsp Red Wine Vinegar
  • 0 1/2 cup Parmesan Cheese (Grated)

DIRECTIONS

  1. In a large pot of lightly salted boiling water, cook kale until tender, about 10 minutes. Drain; reserve 1/2 cup cooking water. Rinse kale under cold water and pat dry.
  2. In a large skillet, cook bacon over medium heat until crisp. Remove bacon from pan, cool then cut into small bite sized pieces; set aside. Reduce heat to low; add diced onion and pepper flakes to bacon drippings. Cook 10 minutes, until onion is tender and lightly golden. Add minced garlic during last minute of cooking time. Drain off excess fat.
  3. Return kale, reserved cooking water and vinegar to skillet. Mix well and heat through. Transfer to a serving dish and sprinkle with Parmesan cheese.
