Keto Jerk Chicken

Ingredients:

  • 1/4 cup Canola Vegetable Oil
  • 2 1/2 peppers Red Hot Chili Peppers
  • 1/4 cup Canola Vegetable Oil
  • 32 ounces boneless, cooked Chicken Breast
  • 1 fluid ounce Fresh Lime Juice
  • 4 teaspoons Dry Mustard
  • 2 teaspoons Salt
  • 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)
  • 2 tablespoons Allspice Ground
  • 1 teaspoon Cinnamon
  • 6 medium (4-1/8" long) Scallions or Spring Onions
  • 2 cloves Garlic

Directions:

  1. Combine scallions, garlic, peppers, oil, lime juice, allspice, mustard, salt, sugar substitute, and cinnamon in a food processor or blender; purée. Transfer to a resealable plastic bag or glass baking dish; add chicken and turn to coat. Refrigerate at least 4 hours and preferably overnight, turning once.
  2. Heat oven to 450°F.
  3. Line a baking sheet with foil. Remove chicken from marinade, letting excess drain off; transfer to baking sheet. Bake until just cooked through, 30-40 minutes. Serve immediately.
