Japanese Cucumber Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 3 medium (4-1/8" long) Scallions or Spring Onions
  • 2/3 tablespoon Tamari Soybean Sauce
  • 1/2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 1 tablespoon Sodium and Sugar Free Rice Vinegar
  • 1 cucumber (8-1/4") Cucumber (with Peel)
  • 1 teaspoon Sesame Oil

Directions:

  1. Slice cucumber and onions into thin rounds and combinewith the vinegar, soy sauce, sesame, and sugar substitute in a large bowl
  2. Toss until well mixed. Allow to sit for 10 minutes for the flavors to blend.  Enjoy!
