INGREDIENTS

  • 0 1/4 oz Basil
  • 6 oz Turkey Sausage
  • 12 oz Cauliflower
  • 7 1/4 oz Stewed Tomatoes
  • 0 1/4 tsp Crushed Red Pepper Flakes
  • 0 1/2 tsp Oregano
  • 2 tbsp Parmesan Cheese (Grated)
  • 1 tablespoon Olive Oil
  • 0 1/4 tsp Salt
  • 0 1/4 tsp Black Pepper

DIRECTIONS

  1. Remove the basil leaves from the stems and discard stems. Roughly chop the leaves and hold.
  2. Remove the sausage from its casing and break into pieces.  Heat a medium non-stick sauté pan over medium heat.  When hot, add the sausage and cook until browned and cooked through, about 5 to 7 minutes.
  3. Cut the cauliflower into bite sized pieces and place in a large non-stick sauté pan over medium-high heat.  Add 1 tablespoon olive oil and sauté until the cauliflower just begins to brown, about 2 minutes.  Add 1 tablespoon of water and cook until the water evaporates and the cauliflower is crisp-tender, about 3 minutes.
  4. Once the cauliflower is crisp-tender, add the sausage and stir. Add the stewed tomatoes, basil, red chili flakes, dried oregano and¼ teaspoon each of salt and pepper.  Cook, stirring occasionally until everything is well incorporated and heated through.
  5. Top the cauliflower and sausage mixture with the Parmesan cheese, cover and cook for 2 minutes, or until the cheese has melted.
  6. Divide the sausage and cauliflower sauté evenly between two plates. Enjoy!
