- 1/4 cup Extra Virgin Olive Oil

Perfect for a winter meal, this hot dressing wilts the salad greens. Serve it over spinach, iceberg, tender chicory or Romaine. Add a few hard-boiled eggs and/or a little leftover roast chicken to make a filling lunch or a light dinner.
The ingredients for this recipe are a little tricky nutritionally because the cooked bacon is not consumed. For this reason the ingredients listed include butter - PLEASE DO NOT ADD BUTTER TO THIS RECIPE. You will need 6 pieces of bacon to make this recipe. Remove the bacon after cooking and keep in the refrigerator for another use unless the recipe specifies using the cooked bacon. For example, Shrimp on mixed greens with bacon and Hot Bacon Vinaigrette. Be sure to use low or no-carb sherry vinegar. Pay attention to the label. Each serving for this recipe is 2 Tbsp, makes 3/4 cup.
- Brown bacon in a skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Using a slotted spoon, transfer to a paper towel-lined plate to drain; keep bacon fat in skillet.
- Add vinegar and oil; whisk, scraping up browned bits from bottom of pan. Season with salt and pepper to taste. Pour over greens while still hot.
