Walking taco bags filled with seasoned ground beef, cheese, and sour cream, served with a pan of taco meat nearby.

Ingredients:

  • 1 pound raw 95% lean ground beef
  • 6 large (54g) fresh radishes, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 10 fl-oz canned original diced tomatoes, with green chilies
  • 6 bags Quest Nacho Cheese Tortilla Style Protein Chips
  • 2 tablespoons shredded sharp cheddar cheese
  • 3 tablespoons sour cream
  • 3 tablespoons sliced fresh green onion, tops & bulb

Directions:

  1. In a large skillet over medium heat, brown the ground beef until cooked through. Add radishes to the ground beef, sprinkle with chili powder, salt and garlic powder and stir until fragrant. Stir in the diced tomatoes with green chili, reduce heat to medium low, cover and cook until the radishes are tender, about 5 minutes. Remove the cover and allow the liquid to reduce, about 5 minutes more.
  2. Add 2/3 cup meat mixture to each bag Nacho Cheese Protein Chips. Top each bag with 1/2 tablespoon sour cream, 1/2 tablespoon green onions, and 1 teaspoon cheddar cheese. Enjoy while hot. One bag assembled as described is one serving.
