Ingredients:
- 1/8 teaspoon White Pepper
- 1 fruit without seed Lemons (with Peel)
- 1 cup chopped Shallots
- 1/4 cup Parsley
- 1/2 teaspoon Salt
- 32 ounces boneless, raw Flounder
- 2 1/3 tablespoons Unsalted Butter Stick
Directions:
- Heat oven to 475°F. Fold a sheet of parchment paper (or foil) in half; with the fold in the center, cut into a half heart shape. Rub 1 teaspoon butter over half of each sheet; set aside.
- Melt remaining tablespoon of butter in a medium skillet over high heat. Add chopped shallots, salt, and pepper; sauté until soft, about 3 minutes.
- Set 4 fillets on buttered sides of paper hearts; top with chopped parsley (other herbs can be substituted), shallots and 2 slices of lemon per fillet. Cover with unbuttered side of foil, taking care to align edges; crimp edges tightly shut. Transfer packets to baking sheet; bake until fish is just cooked through, about 10 minutes.
- To serve, carefully cut open each packet and slide fish onto serving plates.
