Herbed Flounder en Papillote

Ingredients:

  • 1/8 teaspoon White Pepper
  • 1 fruit without seed Lemons (with Peel)
  • 1 cup chopped Shallots
  • 1/4 cup Parsley
  • 1/2 teaspoon Salt
  • 32 ounces boneless, raw Flounder
  • 2 1/3 tablespoons Unsalted Butter Stick

Directions:

  1. Heat oven to 475°F. Fold a sheet of parchment paper (or foil) in half; with the fold in the center, cut into a half heart shape. Rub 1 teaspoon butter over half of each sheet; set aside.
  2. Melt remaining tablespoon of butter in a medium skillet over high heat. Add chopped shallots, salt, and pepper; sauté until soft, about 3 minutes.
  3. Set 4 fillets on buttered sides of paper hearts; top with chopped parsley (other herbs can be substituted), shallots and 2 slices of lemon per fillet. Cover with unbuttered side of foil, taking care to align edges; crimp edges tightly shut. Transfer packets to baking sheet; bake until fish is just cooked through, about 10 minutes.
  4. To serve, carefully cut open each packet and slide fish onto serving plates.
