Hearty Sausage-Vegetable Strata

Ingredients:

  • 8 large Eggs (Whole)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 cup Heavy Cream
  • 1 teaspoon Yellow Mustard Seed
  • 3 cup, chopped or diceds Broccoli, fresh
  • 3 cups Cauliflower, raw
  • 1/2 cup Tap Water
  • 6 ounces Cheddar Cheese
  • 16 ounces Turkey Sausage
  • 4 ounces Baby Carrots

Directions:

Use the Atkins recipe to make Atkins Low Carb Wheat Bread; you will need 6 slices cut into cubes. 
  1. Remove sausage from casing and brown in a large nonstick skillet. Transfer to paper towels to drain.
  2. Spray a 13x9 baking dish with nonstick cooking spray.  Shred the cheese and set aside.
  3. Steam broccoli, cauliflower and carrots for 5 minutes, drain and combine sausage and bread cubes. Pat in an even layer in prepared dish. Mix eggs, cream, water, mustard, salt and pepper. Pour over vegetable and bread mixture. Sprinkle with shredded cheese. Cover with plastic wrap. Refrigerate 4 hours or up to overnight.
  4. Heat oven to 375°F. Bake strata 40-50 minutes, or until knife inserted near the center comes out clean.
