Cooking tip: For an extra kick, add another half of a jalapeno!
Ingredients:
- 2 tablespoons Cilantro, fresh, chopped
- 1/2 fluid ounce Fresh Lime Juice
- 1 large Scallions, raw
- 1 medium whole (2-3/5" diameter) Red Tomato
- 1/4 teaspoon Salt
- 2 each California Avocados
- 1 Jalapeno Pepper
Directions:
- Slice avocados in half lengthwise, remove pits and scoop pulp into bowl with a spoon, then roughly mash with a fork.
- Trim the root and tips from the onion, dice the whole onion, and add to the bowl with the avocado. Remove the seeds from the jalapeno (using gloves), then mince the pepper and add to the bowl. Dice the tomato and add to the bowl. Add the lime juice, cilantro, and salt then mix to combine. Taste and adjust salt as needed.
