Ingredients:

  • 1/4 cup sesame oil
  • 1/4 cup reduced sodium tamari soy sauce
  • 2 tablespoons sambal oelek ground fresh chili paste
  • 2 cloves fresh garlic. minced or pressed
  • 1 teaspoon dried black sesame seeds
  • 1 1/2 pounds (24 ounces) boneless, raw salmon
  • 1 cucumber (301g), thinly sliced or ribboned
  • 1/2 cup (58g) sliced onions
  • 2 teaspoons olive oil
  • 2 teaspoons unseasoned rice vinegar

Directions:

  1. In a gallon sized zip top bag combine the sesame oil, tamari soy sauce, sambal sauce, garlic, and sesame seeds.  Seal top and shake to mix.  Add the salmon and marinate in the refrigerator for 3-4 hours.  Grill on a preheated grill until crisp and cooked to desired temperature.
  2. While preheating the grill, make the cucumber salad.  In a medium bowl toss together cucumber, onion, olive oil, and rice vinegar. Season to taste with salt and freshly ground black pepper.  Allow to sit for 30 minutes or until the salmon is cooked through.  Serve the salmon over the cucumber salad.
