Keto Grilled Green and Yellow Squash with Basil

Ingredients:

  • 1 tablespoon Parsley
  • 1 medium Summer Squash
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon Lemon Zest
  • 1/4 teaspoon Black Pepper
  • 2 medium Zucchinis
  • 1/16 fluid ounce Fresh Lemon Juice
  • 3 tablespoons Basil
  • 1/2 teaspoon Salt

Directions:

  1. Prepare a medium grill or heat broiler. Chop parsley and basil.  In a large bowl, combine zucchini, yellow squash, oil, salt and pepper. Toss to coat.
  2. Grill squash (in batches, if necessary) 2 to 3 minutes per side until lightly charred and just tender. Transfer to a large bowl and toss with basil, parsley, lemon juice and lemon zest.
