0 1/2 cup Greek Yogurt - Plain (Container)

0 1/4 cup Peppermint (Mint)

1 1/2 tbsp Sour Cream (Cultured)

2 lb Eggplant

0 1/4 cup Extra Virgin Olive Oil
DIRECTIONS
- Preheat a grill to high temperature. Dice the green onion and mince the garlic, set aside.
- In a medium bowl mix yogurt, mint, sour cream, green onion, garlic and season with salt and pepper to taste. Set aside. Optional: puree in a blender for a finer textured sauce.
- Toss eggplant with oil and season with salt and pepper. Grill eggplant until tender, about 5 minutes per side. Serve with sauce.
