INGREDIENTS

  • 1 clove Garlic
  • 0 1/2 small Red Onions
  • 4 oz Roasted Bell Peppers
  • 3 tbsp Red Wine Vinegar
  • 4 tablespoon Extra Virgin Olive Oil
  • 6 cup Baby Spinach
  • 8 oz Feta Cheese
  • 0 1/4 cup, chopped English Walnuts

DIRECTIONS

  1. Mince garlic, finely slice onion and thinly slice the roasted red pepper. 
  2. In a large salad bowl, combine vinegar and garlic. Add oil in a thin, steady stream, whisking constantly until smooth.
  3. Add spinach and onion to dressing and toss to coat.
  4. Gently mix in feta and pepper strips. Divide salad on plates; sprinkle with walnuts.
