INGREDIENTS

  • 1 cup Fresh Lemon Juice
  • 3 Tbsp Ginger
  • 3 tbsp Peppermint (Mint)
  • 0 1/2 tsp Allspice
  • 1 cup Tap Water
  • 1 tbsp Sucralose Based Sweetener (Sugar Substitute)
  • 12 fl oz Club Soda

DIRECTIONS

You will need several lemons for this recipe.  See #1 below.
 
  1. Using a vegetable peeler, peel 3 (3-inch-long) strips of zest from one lemon then slice half a lemon to use as a garnish; juice thte remaining lemons for 1 cup juice.   Mince the ginger and finely mince the peppermint.
  2. In a 2-cup or larger microwave-proof container, combine water, whole allspice berries ( 1/2 tsp; optional), ginger and lemon peel. Microwave on high until mixture comes to a simmer, about 2 minutes. Stir in mint and refrigerate until well chilled, at least 1 hour.
  3. Strain into a pitcher and discard the solids. Stir in lemon juice, sugar substitute (to taste) and club soda.  Serve over crushed ice and garnish with mint sprigs and lemon slice
