Keto Ginger Grilled Pork with Asparagus-Pepper Medley

Ingredients:

  • 2 tablespoons Organic Tamari
  • 1 cup sliced Sweet Red Peppers
  • 4 tablespoons Young Green Onions (Tops Only)
  • 4 tablespoons Ginger
  • 2 tablespoons Organic Toasted Sesame Oil
  • 2 cloves Garlic
  • 1 1/4 pounds Pork Loin (Tenderloin)
  • 1 tablespoon Olive Oil
  • 2 cups Chicken Broth, Bouillon or Consomme
  • 18 spear, medium (5-1/4" to 7" long) Asparagus

Directions:

  1. Mince garlic and ginger then combine with the tamari, sesame seed oil, olive oil and broth in a resealable plastic storage bag; seal and shake until well mixed.  Add the pork and then refrigerate at least 2 hours or overnight.
  2. Remove tenderloins from marinade; do not discard marinade - set aside. Heat gas grill to medium and grill tenderloins in covered grill 15 to 20 minutes, until an instant-read thermometer inserted in center of meat reaches 155°F to 160°F.
  3. Slice peppers and trim the asparagus (leave whole or cut into 1 1/2 inch lengths).  Pour marinade into a skillet and heat until it begins to boil over medium-high heat.  Add the red peppers and asparagus and cook until softened; about 3-5 minutes.
  4. Slice pork, serve with the vegetables garnished with diced green onion and serve with the sauce.
