German Chocolate CREAMi Ice Cream
Cooking tip: We tested a variety of recipes using the Ninja CREAMi machine and found this option to be the closest to creamy ice cream in texture. Using this ice cream base, you can switch out the mix in for any Atkins Endulge product that strikes your imagination! Think peanut butter candies, nutty fudge brownie, or a peanut butter cup to make this recipe your own. Just be sure to adjust the net carbs for tracking.

Ingredients:

  • 1 teaspoon vanilla extract USDA
  • 1 tablespoon cream cheese USDA
  • 6 tablespoons heavy whipping cream USDA
  • 2 tablespoons Magic Baker zero sugar baking blend, Splenda
  • 1 tablespoon cocoa powder, unsweetened USDA
  • 1 shake Atkins Creamy Chocolate Coconut Shake
  • 1 bar Atkins Endulge Chocolate Coconut Bar
  • 1/4 cup pecans, chopped USDA

Directions:

Equipment note: This recipe uses a Ninja CREAMi* machine. You will need one empty CREAMi pint along with the machine for this recipe.
  1. In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk the sweetener and vanilla extract into the warm cream cheese until it reaches a thick icing texture. Stir in the cocoa powder until well combined. Slowly whisk in the heavy cream until evenly combined. Add Atkins Chocolate Coconut Shake and whisk until evenly combined. Pour into the Creami pint, cover and freeze for 24 hours.
  2. Remove frozen pint from the freezer and process using Ninja Creami on the lite ice cream setting. Use a spoon to create a hole in the center and add chopped Atkins Endulge Chocolate Coconut Bar and chopped pecans. Process as a mix in. You can serve right away or freeze for up to 30 minutes before scooping. Two scoops (one third of the pint) are one serving.
