Keto Garlicky Coconut Prawns

Ingredients:

  • 1/4 cup Coconut Milk Unsweetened
  • 1 tablespoon Virgin Coconut Oil
  • 16 oz, without shell, raw (yield after cooking) Prawns
  • 1 1/2 teaspoons Garlic
  • 1/4 tablespoon Chili Powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 2 large Scallions or Spring Onions
  • 1 ounce Cilantro (Coriander)

Directions:

  1. Heat oil in a small cast iron skillet. Add minced garlic and cook about 1 minute, stirring often until it becomes fragrant.  Add the salt, chili powder and chili flakes; stir. Add the prawns, stirring until they begin to turn pink. 
  2. Add the coconut milk and stir well. Cook 1 minute more as the coconut milk bubbles up and reduces to cook the prawns cook through. Garnish with diced green onions and cilantro.  Serve immediately.
