Ingredients:
- 1/4 cup Coconut Milk Unsweetened
- 1 tablespoon Virgin Coconut Oil
- 16 oz, without shell, raw (yield after cooking) Prawns
- 1 1/2 teaspoons Garlic
- 1/4 tablespoon Chili Powder
- 1/4 teaspoon Salt
- 1/4 teaspoon Crushed Red Pepper Flakes
- 2 large Scallions or Spring Onions
- 1 ounce Cilantro (Coriander)
Directions:
- Heat oil in a small cast iron skillet. Add minced garlic and cook about 1 minute, stirring often until it becomes fragrant. Add the salt, chili powder and chili flakes; stir. Add the prawns, stirring until they begin to turn pink.
- Add the coconut milk and stir well. Cook 1 minute more as the coconut milk bubbles up and reduces to cook the prawns cook through. Garnish with diced green onions and cilantro. Serve immediately.
