  • 1 Keto Basil Pesto
  • 4 cup Arugula (Rocket)
  • 16 oz Mozzarella Cheese, fresh balls
  • 2 small whole (2-2/5" dia) Red Tomatoes

DIRECTIONS

Use 1/4 cup of the Atkins recipe for Basil Pesto.

 
  1. Toss arugula with 2 tablespoons of the pesto. Mound onto serving plates.
