  • 4 cup Arugula (Rocket)
  • 2 lb Mozzarella Cheese (Whole Milk)
  • 1 serving Basil Pesto
  • 2 small whole (2-2/5" dia) Red Tomatoes

DIRECTIONS

Use 1/4 cup of the Atkins recipe for Basil Pesto

  1. Toss arugula with 2 tablespoons of the pesto. Mound onto serving plates.
  2. Top with alternating slices of mozzarella and tomato. Drizzle with remaining pesto and serve.
