Ingredients:

  • 2 small whole (2-2/5" diameter) Red Tomatoes
  • 16 ounces Mozzarella Cheese, fresh balls
  • 4 cups Arugula (Rocket)

Directions:

Use 1/4 cup of the Atkins recipe for Basil Pesto.
 
  1. Toss arugula with 2 tablespoons of the pesto. Mound onto serving plates.
  2. Top with alternating slices of mozzarella and tomato. Drizzle with remaining pesto and serve.
