Keto Fresh Broccoli Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 4 cup flowerets Broccoli Flower Clusters
  • 1 cup chopped Celery
  • 12 tablespoons Real Mayonnaise
  • 2 teaspoons Sucralose Based Sweetener (Sugar Substitute)
  • 4 medium slice (yield after cooking) Bacon
  • 2 teaspoons Vinegar (Cider)

Directions:

  1. Cook bacon until crisp. Drain on paper towels then chop.  
  2. In a medium bowl combine the broccoli florets, diced celery and bacon. Set aside. (Note: if the taste of fresh broccoli is too strong for your liking, try boiling it in water for 30-60 seconds then quickly immersing in ice water. Be sure to towel dry the broccoli completely before use or the salad will be too watery).
  3. In a small bowl whisk together the mayonnaise ( 3/4 cup), cider vinegar and granular sugar substitute. Add to broccoli mixture and toss with spoons until thoroughly coated. 
  4. Serve immediately or refrigerate for up to 2 days.
