Cooking tip: If the taste of fresh broccoli is too strong for your liking, try boiling it in water for 30-60 seconds then quickly immersing in ice water. Be sure to towel dry the broccoli completely before use or the salad will be too watery.
Ingredients:
- 4 medium slices bacon
- 4 cups (352g) broccoli flowerets
- 1 cup (101g) chopped celery
- 3/4 cup mayonnaise
- 2 teaspoons apple cider vinegar
- 2 teaspoons sucralose based sweetener (sugar substitute)
Directions:
- Cook bacon until crisp. Drain on paper towels then chop.
- In a medium bowl combine the broccoli florets, diced celery and bacon. Set aside.
- In a small bowl whisk together the mayonnaise, cider vinegar and granular sugar substitute. Add to broccoli mixture and toss with spoons until thoroughly coated.
- Serve immediately or refrigerate for up to 2 days.
