Fresh Berry Tarts with Cream

Ingredients:

  • 1/2 cup Red Raspberries
  • 2 tablespoons Sucralose Based Sweetener (Sugar Substitute)
  • 1/4 cup Heavy Cream
  • 1/2 cup Fresh Blueberries
  • 2/3 cup, slivered Almonds

Directions:

  1. Heat broiler.  Chop almonds and divide among 4 small ramekins. Sprinkle 1 tablespoon sugar substitute over the almonds.  Place ramekins on a cookie sheet and broil until the tops of the nuts are golden and the sugar substitute has melted. Remove and cool until at room temperature.
  2. Whip the heavy cream and remaining tablespoon of sugar substitute until doubled in volume.  Place one-quarter of blueberries and one-quarter of raspberries in each ramekin and top with a dollop of whipped cream.  Serve immediately.
