Keto Sea Bass with Artichoke Sauce

Ingredients:

  • 1/4 teaspoon Black Pepper
  • 1/2 small Onion
  • 10 ounces Artichokes (Globe or French, Unprepared, Frozen)
  • 1/2 fluid ounce Fresh Lemon Juice
  • 24 ounces Sea Bass (Mixed Species)
  • 1/2 teaspoon Salt
  • 2 tablespoons Parsley
  • 4 tablespoons Extra Virgin Olive Oil
  • 2 small whole (2-2/5" diameter) Red Tomatoes

Directions:

  1. Sprinkle fish with salt to taste and refrigerate until needed.  Dice the onions and quater the artichokes.
  2. Heat 2 tablespoons olive oil over medium heat in a large skillet with a lid. Add white onions and artichokes; cook 8 minutes until onions are soft and translucent.
  3. Add tomatoes, lemon juice, salt and pepper. Transfer to a saucepan and keep warm.
  4. Pat fish fillets dry. Wipe out skillet and return to a medium-high heat. Add remaining 2 tablespoons olive oil and heat until oil shimmers. Add fillets in a single layer and cook 2 - 3 minutes without shaking the pan, until golden on the bottom. Flip fillets with a spatula.
  5. Top fillets with artichoke mixture, reduce heat to low, cover and cook 3 - 5 more minutes. Sprinkle with parsley before serving.
