Ingredients:

  • 1/2 cup slice Cucumber (with Peel)
  • 2 cups chopped Endive
  • 5 Cherry Tomatoes

Directions:

  1. Slice the endive and evenly slice the cucumber then half the cherry tomatoes. 
  2. Combine all ingredients and toss with low carb salad dressing of your choice.
