Ingredients:
- 1/2 avocado, ns as to florida or californium Avocados
- 1/2 medium whole (2-3/5" diameter) Red Tomatoes
- 2 large Eggs (Whole)
- 3 ounce raw (yield after cooking) Pork Sausage Patty or Link
Directions:
- Form non-link sausage into a patty and cook over medium-high heat in a skillet, or if linked cook until no longer pink in the center; about 5 minutes. Cook alone or with the eggs.
- Prepare eggs as desired by poaching, frying, scrambling or as an omelet.
- Place eggs over sliced tomato and avocado (or use as filling and make an omelet).
- Serve with sausage.
