Eggs with Avocado, Salsa and Turkey Bacon

Ingredients:

  • 1 ounce Salsa
  • 1/2 fruit without skin and seed California Avocados
  • 2 oz, cookeds Turkey Bacon
  • 2 large Eggs (Whole)

Directions:

Use the Atkins recipe to make Salsa Cruda or use 2 tablespoons of no-sugar-added salsa of your choice. 
  1. Cook turkey bacon slices on a non-stick skillet over medium-high heat until crispy.
  2. Slice avocado.
  3. Fry eggs (scramble or poach if desired instead).
  4. Serve the eggs over sliced avocado topped with salsa and the turkey bacon on the side.
